Summer on the grill....

Last summer, I posted this on EpicSki. It has been a favourite in my house every since. I am planning on doing a roast on the grill for the 4th of July but am wondering if someone has a special secret recipe for a rub or marinade that you'd like to share.

Tonight I grilled an english roast, upon the suggestion of a friend.
After marinading the roast beef in a zip lock bag, I grilled the roast on a low flame for 30 minutes, then flipped it and grilled an additional 30 minutes. I basted with the left over marinade, then I turned the flame up to sear for just a few minutes on each side.

Took it off the grill, set for 5 minutes, then sliced thin. Darn near perfection!

Great way to have roast beef without heating up the house.

I've never made a roast on the grill before; that's something I'll have to try!

One of my favorite things to make on the grill is grilled chicken sandwiches. You pound some boneless chicken breasts thin, then marinate them 4-6 hours in 1 cup orange juice, 1/3 cup lemon juice, 1/4 cup oil, 2 tsp sugar, and 1-1/2 tsp lemon pepper. Grill them over a medium heat, and when they're just about done, top them with sliced Monterey Jack cheese until the cheese melts. Then top them with sliced tomato and serve them as a sandwich on sourdough bread that's been grilled with butter and garlic. A great summer meal.
