I don't have much knowledge (yet) of great overall kids' ski programs, although we hope to learn a lot this winter.
I did want to mention one cool thing at Vail, though. If you have your young child (too young for ski school) in Vail's daycare program at Golden Peak, for a small extra fee you can have them *try* skiing if they are 20 months or older.
The program is called Micro Mice, and they take the littlest ones out on the hill for a short period (maybe 10-15 minutes) one or two times during the day, and let them try walking on one ski and then on two skis. They have them stand up on skis from sitting, and maybe even ride the teeniest magic carpet I have ever seen for a little glide down a *hill.* You get a little report card at the end of the day, and can even have them call you to let you know when your child is headed out, if you want to watch. (Vail's too big for this to work if you are skiing on the back side, but if you are nearby or in the Village, you can run over.)
That said, Vail daycare is NOT cheap, but my son loved Micro Mice last year. He was soooooo proud that he'd navigated the little magic carpet, and still talks about all the little things they had him try. He can't wait for *real* ski school this winter. I think he's so excited because they did such a good job of rationing out the fun stuff when he was small, in very manageable doses. Oh, and he also loves the ladies at Vail daycare. Jody, who is one of the managers, is just terrific. Very accomodating and organized, and always remembers us!
