Recipes for a "lighter" ski season

OK ladies, I'm enlisting your help to "lighten the load" before the snow flies. My workouts have been going well, but the diet HAS to change before I can lose the 10 lbs that will be weighing me down!

I seem to do pretty well when I buckle down on my diet - my only problem is that I get bored of the same foods and I start to slack. I know you guys have some AWESOME recipes and meal ideas that are low calorie and healthy (approx 200-400 cals per meal). Anything that's easy and fast to make is a huge plus! Snacks, meals, desserts - you name it.

So bring it on....help out a fellow Diva and show me what you got! I'll start it off with one of my faves:

Fish Tacos

2 fillets of Mahi Mahi or Tilapia (I buy the frozen ones at Costco)
6" corn tortillas
Green cabbage
cilantro
seasonings
Optional: hot sauce, salsa, guac, light ranch dressing
Lime wedges

Place the fish fillets (thawed or frozen) on a large sheet of aluminum foil and season heavily with some or all of the following (seasoned salt, chili powder, cumin, Cholula seasoning, garlic, onion salt, even cayenne if you're brave). Wrap the fillets tightly with foil and place on the grill (set to med-high). Grill for 30-35 minutes. (You can also sautee the fish on the stove if you don't want to use the grill). Unwrap the fish and flake it into large chunks with a fork. In the meantime, chop the cabbage into very narrow strips and chop the cilantro. I also like to steam the tortillas in a steamer or in the microwave (put the tortillas between two moist paper towels).

To construct the tacos, spread the optional guac on the tortilla, pile the cabbage on, spoon on some fish, sprinkle cilantro on top, and squeeze a lime over all of it. I like to use cholula/tapatio, and sometimes salsa - my husband likes to put a little bit of ranch on top as well.

1 fillet usually serves two people (two tacos each)

Banana
any fresh or frozen fruits/combo you like
Sweetened with either :
Juice of 1 organic orange-we use a hande held juice tool
or unpastureized/unfiltered Honey
Option-teaspoon of coconut oil
Blend, slurp through straw.

When I use strawberries,banana,handfull of then neigh's blueberries & the orange, my kid gets all that good fruit variety/servings he missed during school day. Me too. The whole yogurt contains more calcium & nutrition than something diet. This is soo filling & nutrition packed, if you leave out the banana you can reduce the starch/sugar content for dieting. :ski2:
