Patagonia Nano Air. This mid layer jacket is amazing, it's warm when it's cold and cooler when it's warm. I am not a big fan of the fit but the pro's of the jacket far outweigh the fit. I've worn all types of mid layers, packable down jackets, fleece, etc. Nano air is by far the best under my shell.

I love the Arc'teryx Proton Hoody - lighweight, warm and breathable. Very similar to the Patagonia Nano Air which I also love but the Proton fits me better.

My midlayer under a shell depends on the temperature. Down if it's cold, Arc'Teryx Atom AR if it's not as cold. I have various warmths of down, too 
If it's warmer, I'll wear a base layer and a lighter fleece. Down is great for riding lifts but it can get too hot in a hurry in temps hovering near 20 degrees or higher.

Honestly my favourites are condition dependent, but I do have a bias towards merino as it is great for travelling to ski.
Insulator layers: Mons Royale merino insulator, Icebreaker merino insulator (different thickness/weight), down vest, Marmot "featherless down" hoody
Mid layers: various Mons Royale and Icebreaker merinos between 260-340gsm, or the Burton Crown bonded hoodie (with DWR)
