How to start a season with new equipment?

Depends somewhat on how many days and what type of snow you are likely to ski on the first season for "new to you" skis.

I'm hoping to get 20 total days or more next season in Tahoe and Colorado. But ofc, after this season, hard to say for sure.

In that case, I wouldn't bother with Phantom for the first season. If you end up with skis you really like and plan to keep for more than a couple more seasons, can always treat them later.

Assuming you can get a pair of boots from a good boot fitter by the fall, be very tempting to buy a pair of all-mountain skis from a season or two ago. Wouldn't be in a hurry though. Keep reading about options and the experience of women in your size category buying skis as intermediates. Pick a couple models and check prices for new and used skis. Learn about recommended online sources like Ski Essentials. There are equivalent ski shops with e-stores on the west coast.
