Easy dinner ideas...

Girls, tell me what your dinner staples are throughout the week... I need something new in my life.

My staples are currently - homemade veggie pizza, shake-and-bake + meat, baked/grilled chicken and veggies, lasanga/pasta, and then i order out Thai food from Thai basil once a week.

So I do this, then I repeat... how boring!!! I'm not big on going out to eat or ordering out unless it's a social thing. I like to stay relatively healthy if I can also.

Ideas?

Cobb/chef/chicken cesaer salad.

Fahitas.

Quesadillas (with avacado, cheese, and chicken).

BBQ pork (roast pork loin in a slow cooker then just add Sweet Baby Rays BBQ sauce).

Chicken casserole (chicken, COC soup, milk, stuffing, swiss cheese).

Goulash.



One of my favorite side dishes is grilled vegetables that are marinated in Italinan dressing. Just before you take them off sprinkle a bit of fresh parmesean on them.

get yourself a crockpot. Mix up a stew or pretty much anything at night, turn it on in the morning, come home DINNER. I make stews, meatballs, chili, my favorite is what I call Chicken surprise. I take chicken breasts andwhat ever veggies are in fridge, some veggie broth, and spices. Sometimes i serve w/rice, sometimes pasta.

Other standbys are turkey stuffed peppers and my grocery store has a great curry in a bottle and I make quick stir fry w/it.

Baby back rib with your fav BBQ sauce, the crock-pot. Or this time of year, cover the ribs with water and cook. Remove and finish with BBQ sauce on the Barbie
Chicken or Turkey marinated in 1 can of diet 7-up and 1/4 cup of low soduim soya sauce. BBQ too!
I've another chicken marinated recipel, but I'm at work, so tonight I'll post that one.

I second the crock pot -- the meals always taste good, and it is quick and easy with very little clean up.

I stock the freezer with those Bertolli two person frozen pasta meals. They heat up in about 15 minutes in a skillet on the stove, and are not too bad nutritionally.

Chicken stir fry is pretty quick and easy. Could probably make it even healthier by steaming the veggies while the chicken cooks.

Well, keeping in mind that I have a very picky toddler...

We do quesadillas a lot. I mix up a quick guacamole for me, and even with shredding my own cheese (I buy the big Tillamook pepperjack log at costco), it takes less than 10 minutes to have a pretty healthy and easy meal. You can throw pretty much whatever you want in there, too. I put ground turkey meat with taco seasoning in DS's, sometimes leftover rotisserie chicken, frozen corn/black beans/onions, whatever!

I do a lot of the Amy's frozen meals for just me. DS will eat the pizzas, but I really like the cheese enchiladas and some of the indian meals.

One of my favorite things for just me is a big salad. I use spring mix, and top it with chicken, goat cheese, sometimes avocado, dried cranberries, slivered almonds, and creamy balsamic vinaigrette. Yum. Or just chicken, avocado, and Annie's Naturals Woodstock dressing.

An easy pasta that I do sometimes is whole wheat thin spaghetti with asparagus, lemon and parmesan cheese. I just cook the pasta, and while it's cooking, saute the asparagus (cut into like 2 inch pieces) in a little bit of olive oil and butter. Sometimes I add a little garlic to the saute. When it's crisp-tender, I take it off the heat and squeeze some lemon juice over the top. Toss the whole thing with the pasta and grate a bunch of fresh parmesan over it. Yum. Quick, pretty easy, and pretty healthy!

I've gotten so I like those wraps, you can buy a package of them and (like others said) make a quesadilla or rollup your favorite sandwich/salad stuff, or even make a mini pizza. and the package lasts a pretty long time.

Whole wheat couscous and stuff.

Last night, it was couscous made with beef broth, a can of diced tomatoes, a can of pinto beans (because the store was out of garbanzo beans), thyme, basil, swirl of balsamic vinegar, salt to taste, cinnamon, and almond slivers.

Couscous takes 4 minutes, and everything else comes out of a can.

I really enjoy fish on the grill. It is quick, easy and usually hits the spot.
Schwanns has a rice pilaf that is precooked and can be warmed up in the microwave in 2 minutes that makes a nice combo with the fish.

SnoBunny, I hear SkiDiva makes a mean veggie lasagna, which I missed out on last spring.
Don't suppose she's had you do a taste test of that?
